1/2 cup unsalted butter, chilled and cubed

3–4 tbsp ice water
3 ripe pears, peeled and sliced
1/2 cup granulated sugar (for caramel)
1/4 cup heavy cream
2 tbsp unsalted butter
1/2 tsp sea salt
