Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts
  • 16 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Additional shredded coconut for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Whisk flour, baking soda, baking powder, and salt in a medium bowl.
  3. In a large bowl, blend granulated sugar, brown sugar, and oil. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Alternately add dry ingredients and buttermilk to wet mixture, mixing just until combined.
  5. Fold in shredded coconut and chopped nuts evenly.
  6. Divide batter evenly among prepared pans.
  7. Bake 30-35 minutes until a toothpick inserted in center comes out clean.
  8. Cool cakes in pans 10 minutes, then transfer to wire racks to cool completely.
  9. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
  10. Assemble cake layers with frosting between each. Cover entire cake with frosting and sprinkle shredded coconut on top.
