Soft and buttery Kentucky Butter Cake Cookies made with cake mix and topped with a warm vanilla butter glaze that soaks into every bite for rich, irresistible flavor.

Ingredients

1 box white cake mix

2 eggs, whisked

1/3 cup butter, melted

For the Butter Glaze:

1/4 cup butter

1/2 cup granulated sugar

1 tablespoon water

1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix cake mix, whisked eggs, and melted butter until fully combined into a thick dough.
  3. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing slightly apart.
  4. Bake for 8–10 minutes, until edges are lightly golden but centers remain soft.
  5. Cool slightly on the pan.
  6. For the glaze, melt butter, sugar, and water in a small saucepan over low heat, stirring until sugar dissolves.
  7. Remove from heat and stir in vanilla extract.
  8. Spoon glaze over warm cookies, allowing it to soak in.
  9. Let glaze set before serving.

Notes

Do not overbake to keep cookies soft and tender.

Cookies taste even better the next day after the glaze fully absorbs.

Add a pinch of salt to the glaze for a sweet-and-salty twist.

Glaze can be gently reheated with a splash of water if it thickens.
