This Korean Beef Bowl Meal Prep offers a savory-sweet Korean-style ground beef served with tender spinach, fluffy brown rice, and soft-boiled eggs—perfect for easy, flavorful lunches or dinners throughout the week.

Ingredients

1 cup brown rice

4 large eggs

2 tablespoons olive oil

2 cloves garlic, minced (divided)

4 cups chopped spinach

¼ cup brown sugar, packed

¼ cup reduced sodium soy sauce

1 tablespoon freshly grated ginger

2 teaspoons sesame oil

½ teaspoon Sriracha, or more to taste

1 tablespoon olive oil

1 pound ground beef

2 green onions, thinly sliced

¼ teaspoon sesame seeds (for garnish)

Instructions

  1. In a saucepan with 2 cups of water, cook the brown rice according to package instructions. Set aside.
  2. Place eggs in a saucepan and cover with water by 1 inch. Bring to a boil, then cook for 1 minute. Remove from heat, cover, and let sit for 8–10 minutes. Drain, cool, peel, and slice in half.
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 1 clove of minced garlic and cook until fragrant, about 1–2 minutes. Add spinach and stir until wilted, about 2–3 minutes. Set aside.
  4. In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil, and Sriracha.
  5. Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Add the remaining 1 clove of minced garlic and cook for 1 minute. Add ground beef and cook until browned, about 3–5 minutes, crumbling as it cooks. Drain any excess fat.
  6. Add the sauce and green onions to the beef. Stir to combine and let simmer for 2 minutes until heated through.
  7. Divide cooked rice, beef mixture, sautéed spinach, and eggs into 4 meal prep containers. Garnish with green onions and sesame seeds, if desired.

Notes

Use tamari or coconut aminos for a gluten-free version.

Swap brown rice for cauliflower rice for a low-carb option.

Store in airtight containers in the fridge for up to 4 days.

Reheat in the microwave for 1–2 minutes before serving.
