Lemon Curd Ambrosia

A light, creamy, no-bake dessert made with whipped cream, lemon yoghurt, tangy lemon curd, and soft marshmallows. Refreshing, airy, and perfect for make-ahead entertaining.

Ingredients

300ml cream

200g white marshmallows, halved

500g lemon yoghurt

200g lemon curd

To serve: 30g white chocolate, shaved

Instructions

  1. Whip the cream in a large bowl until soft peaks form.
  2. Add the halved marshmallows to the whipped cream.
  3. Add the lemon yoghurt and half of the lemon curd, gently folding until just combined to keep the mixture light.
  4. Transfer the mixture to a serving dish.
  5. Spoon the remaining lemon curd over the top and swirl gently to create a marbled effect.
  6. Shave white chocolate over the top.
  7. Refrigerate for at least 2 hours before serving.

Notes

Add fresh berries like raspberries or blueberries for extra color and freshness.

Mix in crushed cookies or shortbread for added texture.

Swap lemon yoghurt for vanilla yoghurt for a milder citrus flavor.

Use homemade lemon curd if preferred.

Serve in individual cups for easy portioning.
