A light and comforting baked lemon dessert that magically forms a fluffy sponge topping with a silky, tangy lemon sauce underneath.

Ingredients

75g (2.7oz) butter, melted

1 tablespoon lemon zest

⅓ cup lemon juice

3 eggs, separated

1 cup milk

1 cup caster sugar

½ cup self-raising flour

1 tablespoon icing sugar

Cream or ice cream, to serve

Instructions

  1. Preheat the oven to 170°C (fan bake). Lightly grease an ovenproof dish or 4–6 ramekins.
  2. In a bowl, whisk together the melted butter, lemon zest, lemon juice, egg yolks, and milk until smooth.
  3. Sift in the caster sugar and self-raising flour and mix until well combined.
  4. In a clean bowl, beat the egg whites until soft peaks form.
  5. Gently fold half of the egg whites into the lemon mixture to loosen it, then carefully fold in the remaining egg whites.
  6. Spoon the mixture into the prepared dish or ramekins.
  7. Place the dish(es) into a larger baking tray and carefully pour boiling water into the tray until it reaches halfway up the sides.
  8. Bake for 25–30 minutes, until lightly golden on top and just set.
  9. Remove from the oven, dust with icing sugar, and serve warm with cream or ice cream.

Notes

A water bath ensures gentle cooking and helps create the pudding-like texture.

Best served warm for the ideal contrast of sponge and sauce.

Lime juice and zest can be used instead of lemon.

Do not overbake, as the center should remain soft.
