Bright, creamy lemon bars with a silky citrus filling layered over a tender, buttery crust and finished with a light streusel crumble. These bars slice beautifully after chilling and deliver bold lemon flavor without being heavy.

Ingredients

For the crust and streusel:

1 cup (2 sticks) unsalted butter, melted

1 cup granulated sugar

2 teaspoons vanilla extract

1/2 teaspoon salt

2 cups all-purpose flour

For the lemon filling:

1 (14 oz) can sweetened condensed milk

2 tablespoons lemon zest (from 23 lemons)

1/2 cup fresh lemon juice

2 large egg yolks

Optional topping:

Powdered sugar

Extra lemon zest or candied lemon peel

Instructions

  1. Heat oven to 350°F (175°C). Line an 8×8 or 9×9-inch baking pan with parchment or foil and lightly spray.
  2. In a large bowl, mix melted butter, sugar, vanilla, and salt. Stir in flour until a soft dough forms.
  3. Reserve 1 cup of the dough for streusel. Press the remaining dough firmly into the bottom of the prepared pan.
  4. In a separate bowl, whisk sweetened condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
  5. Pour lemon filling over the crust. Crumble the reserved dough evenly over the top.
  6. Bake for 35–40 minutes, or until edges are golden and the center looks mostly set.
  7. Cool completely at room temperature, then chill at least 2 hours before slicing.

Notes

Add 1 teaspoon almond extract to the crust for a nutty flavor.

Use lime or orange juice to create a citrus blend.

Fold shredded coconut into the streusel for extra texture.

Drizzle a lemon glaze on top for additional brightness.

Top with crushed freeze-dried raspberries for color and tartness.
