This homemade Lemon Loaf captures the tangy lemon flavor and moist texture of the popular Starbucks version. It’s easy to make with simple ingredients, making it perfect for breakfast, an afternoon snack, or a light dessert.

Ingredients

For the Lemon Loaf:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 2 tablespoons lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon lemon extract

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon milk
  • 1 tablespoon melted butter

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 4×8 or 5×9-inch loaf pan with non-stick spray.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add Wet Ingredients: Add the eggs one at a time, mixing well after each addition. Then, stir in the sour cream, lemon zest, lemon juice, and lemon extract until smooth.

  8. Prepare Glaze: Whisk together the powdered sugar, lemon juice, milk, and melted butter until smooth.
