Lemon Rolls combine soft, fluffy dough with a burst of citrusy lemon flavor, topped with a sweet glaze, making them an irresistible treat perfect for breakfast, brunch, or dessert.

Ingredients

4 cups all-purpose flour

½ cup granulated sugar

1 package (2 ¼ teaspoons) active dry yeast

1 teaspoon salt

1 cup whole milk

⅓ cup unsalted butter (melted)

2 large eggs

Zest of 2 lemons

¼ cup fresh lemon juice

1 tablespoon vanilla extract

Instructions

  1. Prepare the dough: In a large bowl, combine 2 cups of flour, sugar, yeast, and salt. Mix well.
  2. Heat the milk: Warm the milk in a saucepan until it’s warm but not boiling. Add it to the dry ingredients and stir.
  3. Mix initial ingredients: Add melted butter, eggs, lemon zest, lemon juice, and vanilla extract to the mixture. Stir to combine.
  4. Knead the dough: Gradually add the remaining flour, one cup at a time, until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic.
  5. First rise: Place the dough in a greased bowl, cover, and let it rise for about 1 hour until doubled in size.
  6. Prepare the filling: In a small bowl, mix softened butter, brown sugar, cinnamon, and lemon juice until smooth.
  7. Roll out the dough: Punch the dough down, roll it into a rectangle (about ¼ inch thick), and spread the filling evenly over it.
  8. Form the rolls: Starting from one long side, tightly roll the dough into a log and pinch the seam to seal.
  9. Slice the rolls: Cut the log into 12 equal pieces and place them in a greased baking dish.
  10. Second rise: Cover the rolls and let them rise for another 30 minutes.
  11. Preheat oven: Preheat the oven to 350°F (175°C).
  12. Bake: Bake for 25-30 minutes until golden brown.
  13. Cool: Let the rolls cool for 10-15 minutes before glazing.
  14. Prepare the glaze: Mix powdered sugar, lemon juice, and zest until smooth and glossy.
  15. Drizzle the glaze: Drizzle the glaze over the cooled rolls.

Notes

For a vegan version, use plant-based butter, non-dairy milk, and egg substitutes.

For a twist, add fresh blueberries or strawberries to the filling.

If the dough is too sticky, add more flour, a tablespoon at a time, until smooth.

Use a bread machine to make the dough if desired, then proceed with the filling and baking.
