Lime Bars offer a refreshing twist on classic lemon bars, with a buttery, crumbly crust and a tangy lime filling. These bars are a sweet, zesty treat that’s perfect for any occasion.

Ingredients

1 cup all-purpose flour (for the crust)

¼ cup powdered sugar (for the crust)

½ cup unsalted butter, cold and cubed (for the crust)

½ tsp salt (for the crust)

2 large eggs (for the filling)

1 cup granulated sugar (for the filling)

2 tbsp all-purpose flour (for the filling)

⅓ cup fresh lime juice (about 34 limes)

1 tbsp lime zest

Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. For the crust: Mix flour, powdered sugar, salt, and cold butter. Press into the prepared pan and bake for 18-20 minutes until golden.
  3. For the filling: Whisk together eggs, sugar, flour, lime juice, and zest until smooth. Pour over the baked crust.
  4. Bake for another 20-22 minutes until the filling is set. Let cool to room temperature, then refrigerate for at least 2 hours.
  5. Dust with powdered sugar and cut into 16 squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days.

For a gluten-free option, swap the flour with a gluten-free flour blend.

Freeze for up to 3 months by wrapping individual bars in plastic wrap.
