Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

3 teaspoons of Earl Grey tea leaves (or 3 tea bags)

1 cup whole milk

½ cup unsalted butter, softened

3 large eggs

1 tablespoon baking powder

¼ teaspoon salt

2 teaspoons vanilla extract

½ cup heavy cream (for frosting)

Extra sugar (to taste, for frosting)

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Infuse Milk: In a saucepan, heat the milk on low heat until warm. Add the Earl Grey tea leaves (or tea bags), allowing them to steep for about 10 minutes. Remove the tea and set the milk aside to cool.
  3. Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, and salt.
  4. Cream Butter and Sugar: In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add Eggs: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  6. Combine Ingredients: Gradually mix the dry ingredients into the butter-sugar mixture, alternating with the brewed Earl Grey milk. Start and finish with the dry ingredients.
  7. Stir in Vanilla: Add the vanilla extract and mix until just combined. Be careful not to overmix.
  8. Pour Batter: Divide the batter evenly between the two prepared cake pans.
  9. Bake: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool: Remove from the oven and allow the cakes to cool in their pans for 20 minutes before transferring them to wire racks to cool completely.
