These London Fog Cookies offer the delightful flavors of Earl Grey tea and lavender in a soft, tender cookie. With a hint of citrus and floral notes, these cookies are a perfect treat for tea lovers.

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 tablespoon vanilla extract

1 egg

2 teaspoons loose Earl Grey tea (or 2 tea bags)

1 teaspoon dried lavender (edible)

1 tablespoon milk (adjust as necessary)

Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine dry ingredients: Sift together flour, baking soda, baking powder, and salt.
  3. Infuse the tea: Combine Earl Grey tea with hot water and let it steep for 5 minutes. Strain and cool.
  4. Cream butter and sugar: Beat butter and sugar until light and fluffy.
  5. Add egg and vanilla: Mix in the egg and vanilla extract until smooth.
  6. Blend in tea and lavender: Add the cooled tea and dried lavender, then mix well.
  7. Combine wet and dry ingredients: Gradually stir in dry ingredients. If dough is dry, add a little milk until desired consistency.
  8. Scoop cookies: Drop tablespoon-sized dough onto the prepared baking sheet, leaving 2 inches between cookies.
  9. Bake: Bake for 10-12 minutes or until edges are golden. Let cool for 5 minutes before transferring to a wire rack.

Notes

If you prefer sweeter cookies, increase sugar slightly, but be mindful of the tea and lavender flavor balance.

For crunchier cookies, increase baking time by 1-2 minutes.

Freeze the dough for up to 3 months and bake directly from frozen.
