Magical Chocolate Bars

Delightful chocolate bars with a creamy ice cream center, coated in a crunchy chocolate hard shell, customizable with fun toppings for a magical treat.

Ingredients

1 pint chocolate ice cream

3 jumbo craft sticks

Instant Chocolate Hard Shell:

2 cups semisweet chocolate chips

⅔ cup coconut oil

Instructions

  1. Line a baking sheet with waxed paper.
  2. Remove the lid from the ice cream container. Working quickly, cut the container off the ice cream and turn it on its side on a work surface.
  3. Insert the craft sticks into the side of the ice cream, spacing them evenly.
  4. Cut the ice cream between the sticks, creating 3 bars.
  5. Arrange the ice cream bars on the prepared baking sheet and freeze them until completely solid, about 8 hours to overnight.
  6. For the chocolate hard shell, combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in the microwave in 30-second intervals, mixing well each time, until the chocolate mixture is smooth, about 1 to 2 minutes.
  7. Hold one ice cream bar over a separate measuring cup and pour the chocolate hard shell mixture over the bar to cover it completely. Let the chocolate dry for a few seconds and then pour the mixture over the bar again, creating a thick shell.
  8. Place the bar back on the waxed paper. Repeat with the remaining bars and chocolate hard shell mixture.
  9. Freeze the bars until set, at least 15 minutes.

Notes

You can swap chocolate ice cream for any flavor you prefer like vanilla, strawberry, or mint chocolate chip.

Top the chocolate shell with sprinkles, chopped nuts, or other fun toppings before the chocolate sets.

For a thicker chocolate shell, apply a second layer of the chocolate mixture after the first layer has set.

These bars can be made ahead and stored in the freezer for up to 1 week.
