Mango and Carrot Gelatin Bites

Chewy, colorful mango and carrot gelatin bites that are naturally sweet, nutrient-packed, and collagen-rich. Perfect for kids, adults, and a guilt-free snack or lunchbox treat.

Ingredients

1 ½ cups diced mango chunks (defrosted if frozen)

1 medium carrot, steamed until soft

2 tablespoons honey (or more to taste)

¼ cup water

5 tablespoons grass-fed beef gelatin powder

Instructions

  1. Line a 9-inch loaf pan with parchment paper and lightly coat with coconut oil spray.
  2. In a high-speed blender, combine mango, steamed carrot, honey, and water. Blend until silky smooth, about 5 minutes. Taste and add more honey if needed.
  3. Pour the puree into a saucepan. Sprinkle gelatin evenly on top and let sit for 5 minutes without stirring.
  4. Place saucepan over medium heat and whisk continuously until the gelatin is fully dissolved and the mixture is smooth. Do not boil.
  5. Pour mixture into the prepared pan, smoothing the surface.
  6. Refrigerate for 3–4 hours, or until set.
  7. Once firm, cut into cubes or use cookie cutters for fun shapes. Store in the fridge for up to 5 days.

Notes

Use maple syrup or agave instead of honey for a different sweetener.

Add orange juice or zest for a citrusy twist.

Try sweet potatoes or parsnips in place of carrot for a new flavor.

Use agar-agar or another plant-based gelatin for a vegan version.

Blend in a few strawberries or pineapple for a tropical mix.

Do not reheat; these bites are meant to be eaten chilled.
