This Melt-In-Your-Mouth Chicken Breast recipe creates incredibly tender, juicy, and flavorful chicken with a creamy Parmesan coating. Baked to golden perfection, it’s an easy weeknight dinner that pairs well with a variety of sides.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.52 pounds)
  • ½ cup mayonnaise (or Greek yogurt for a lighter option)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions

  • Preheat the Oven:
Preheat your oven to 375°F (190°C).

  • Prepare the Chicken:
Place chicken breasts between two pieces of plastic wrap or parchment paper and pound them to an even thickness. Season both sides with salt and pepper, then place them in a greased or parchment-lined baking dish.

  • Make the Creamy Mixture:
In a small bowl, mix mayonnaise (or Greek yogurt), Parmesan cheese, garlic powder, onion powder, Italian seasoning, and paprika until smooth.

  • Coat the Chicken:
Spread the mixture evenly over the top of each chicken breast.

  • Bake:
Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  • Optional Broil:
For a crispier topping, broil for the last 2-3 minutes while keeping a close eye to prevent burning.

  • Rest and Serve:
Let the chicken rest for 5 minutes before serving. Garnish with parsley or chives if desired.

Notes

  • Alternative Cheeses: Try mozzarella, cheddar, or Asiago for different flavors.
  • Make it Spicy: Add cayenne pepper or red pepper flakes for heat.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheating: Bake at 350°F (175°C) for 15-20 minutes or microwave in short intervals.
