Ingredients

1 cup all-purpose flour

¼ cup powdered sugar

½ cup unsalted butter, softened

¼ teaspoon salt

¼ cup cream cheese, softened

½ cup powdered sugar (for filling)

1 teaspoon vanilla extract

1 cup whipped cream (store-bought or homemade)

2 cups mixed fresh fruit (such as strawberries, blueberries, kiwi, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine flour, powdered sugar, and salt. Add softened butter and mix until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom and sides of a mini muffin tin to form tart shells.
  4. Bake for 12–15 minutes or until lightly golden. Cool completely.
  5. Beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well.
  6. Gently fold whipped cream into the cream cheese mixture until light and fluffy.
  7. Fill cooled tart shells with the cream cheese mixture.
  8. Top each tart with assorted fresh fruit, arranging them decoratively.
  9. Chill tarts for at least 30 minutes before serving to meld flavors.
