Mint Chocolate Chip Protein Balls are an easy, no-bake snack packed with protein and refreshing mint chocolate flavor. Perfect for a quick energy boost or guilt-free treat anytime.

Ingredients

1 cup rolled oats

½ cup chocolate protein powder

¼ cup almond butter

¼ cup honey

¼ cup mini chocolate chips

¼ teaspoon peppermint extract

Pinch of salt

12 tablespoons water (as needed)

Instructions

  1. In a large bowl, combine rolled oats, protein powder, almond butter, honey, chocolate chips, peppermint extract, and salt.
  2. Mix well until combined. If the mixture is too dry, add water one tablespoon at a time until it holds together.
  3. Using your hands, roll mixture into 1-inch balls.
  4. Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Store leftovers in an airtight container in the fridge for up to one week.
