Ingredients

1 cup sweet rice flour (mochi flour)

1/4 cup sugar

1 cup water

Instructions

  1. Make the mochi batter: In a microwave-safe bowl, mix sweet rice flour and sugar. Gradually add water while stirring until smooth and lump-free.
  2. Cook the mochi: Cover with plastic wrap (leave a small vent) and microwave on high for 1 minute. Stir, then repeat twice (total 3 minutes) until sticky, glossy, and translucent.
  3. Cool the mochi: Dust a clean surface with cornstarch or potato starch. Transfer mochi onto the surface and let cool for 5 minutes.
  4. Shape the mochi: Dust hands with starch and divide mochi into small portions (about golf-ball size). Flatten each into a 1/4-inch-thick round.
  5. Assemble the sandwiches: Place a spoonful of peach jam in the center of one mochi round. Add whipped cream or a peach slice if desired. Top with another mochi round and gently press edges to seal.
  6. Serve: Arrange on a serving plate and garnish with fresh peach slices and mint. Enjoy immediately or chill for a firmer texture.
