3 large eggs

¼ cup fresh mozzarella cheese, shredded

1 tablespoon butter or olive oil

Instructions

  1. Crack the eggs into a bowl and whisk them until well-beaten. Season with salt and pepper.
  2. Place a non-stick skillet over medium heat. Add the butter or olive oil and allow it to melt or heat up.
  3. Pour the beaten eggs into the pan, swirling the pan to ensure they cover the base evenly. Let it cook for 1-2 minutes without stirring.
  4. Sprinkle the shredded mozzarella cheese over one half of the omelet while it’s still slightly runny on top.
