Muddy Buddy Rice Krispies are a crispy, chocolatey, and peanut buttery treat that combines the beloved Muddy Buddy concept with Rice Krispies for extra crunch. Coated in a rich chocolate-peanut butter mixture and dusted with powdered sugar, these no-bake snacks are perfect for any occasion.

Ingredients

6 cups Rice Krispies cereal

2 cups chocolate chips

½ cup creamy peanut butter

¼ cup unsalted butter

1 teaspoon vanilla extract

1 ½ cups powdered sugar (or ½ cup for a lighter coating)

Instructions

  1. Melt the Chocolate Mixture: In a microwave-safe bowl, melt the chocolate chips and peanut butter in 30-second intervals, stirring between each interval until smooth.
  2. Stir in Butter and Vanilla: Once the chocolate and peanut butter are melted and smooth, stir in the unsalted butter and vanilla extract until well combined.
  3. Coat the Cereal: In a large mixing bowl, pour the melted chocolate mixture over the Rice Krispies. Gently fold the mixture to coat the cereal evenly without crushing it.
  4. Cool and Coat with Powdered Sugar: Spread the chocolate-coated cereal mixture onto a baking sheet and allow it to cool completely. Once cooled, place the mixture into a large resealable plastic bag, add the powdered sugar, seal the bag, and shake until the cereal is evenly coated.
  5. Serve and Enjoy: Transfer the coated Rice Krispies to a bowl or airtight container. Serve immediately or store for later.

Notes

For a nut-free version, use sunflower seed butter instead of peanut butter.

Feel free to add mix-ins like pretzels, mini marshmallows, or chopped nuts to enhance the texture and flavor.

Use white chocolate or dark chocolate chips for a different flavor profile.

Reduce powdered sugar to ½ cup for a lighter coating if desired.
