Neapolitan Ice Cream Sandwiches are a fun, indulgent treat that combine the classic trio of chocolate, vanilla, and strawberry ice cream between soft, freshly baked cookies.

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 pint vanilla ice cream

1 pint strawberry ice cream

1 pint chocolate ice cream

Whipped cream (for topping)

Sprinkles (for decoration)

Instructions

  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, mixing well.
  2. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  3. Preheat your oven to 350°F (175°C). Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until the edges are golden. Let the cookies cool completely.
  4. Once the cookies have cooled, scoop a generous amount of each ice cream flavor onto the flat side of one cookie. Top with another cookie, pressing gently to create a sandwich. Repeat until all cookies are used.
  5. Optional: Top the ice cream sandwiches with whipped cream and sprinkles for added flair.

Notes

These sandwiches can be stored in the freezer for up to 1-2 weeks.

If making dairy-free, use coconut oil instead of butter and choose non-dairy ice cream.

For a healthier version, replace granulated sugar with coconut sugar.

If making gluten-free, swap all-purpose flour with a gluten-free flour blend.
