These New Orleans Pecan Clusters are a delectable treat combining crunchy pecans and a sweet, caramelized glaze. Perfect for snacking or gifting, these bite-sized delights are quick, easy to make, and will leave everyone craving more with their irresistible flavor and texture.

Ingredients

  • 2 cups pecan halves
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Workspace: Line a baking sheet with parchment paper or a silicone mat and set aside.
  2. Melt the Butter and Sugars: In a saucepan over medium heat, combine butter, granulated sugar, and light brown sugar. Stir constantly until the butter melts and the sugars dissolve into a smooth syrup.
  3. Add Cream & Vanilla: Stir in the heavy cream and vanilla extract. Continue to cook for 2-3 minutes, letting the mixture thicken slightly.
  4. Fold in Pecans: Remove the saucepan from heat and immediately fold in the pecan halves, ensuring they are evenly coated in the caramelized mixture.
  5. Form Clusters: Drop spoonfuls of the pecan mixture onto the prepared baking sheet. Shape them into small clusters, pressing gently to ensure the pecans stick together.
  6. Cool and Harden: Allow the clusters to cool for 30-60 minutes, or refrigerate for faster setting.
  7. Serve: Once hardened, transfer to an airtight container. Serve or gift as desired!

Notes

  • Spicy Kick: Add a pinch of cayenne pepper for a hint of heat.
  • Chocolate Drizzle: Drizzle melted chocolate over the clusters for added decadence.
  • Different Nuts: Swap pecans for almonds, walnuts, or hazelnuts for a different twist.
