No Bake Macadamia Nut Cookies are an easy, quick treat made with creamy macadamia nut butter, oats, and a touch of carob powder. No baking required, just mix, refrigerate, and enjoy!

Ingredients

1 cup white sugar

1 cup brown sugar

½ cup butter

½ cup soy milk

2 tablespoons carob powder

¼ cup macadamia nut butter

3 cups oats

Instructions

  1. In a large pan over medium-high heat, combine white sugar, brown sugar, butter, soy milk, and carob powder. Bring to a boil and let it simmer for 2 minutes, stirring occasionally.
  2. Remove the pan from heat and stir in the macadamia nut butter until fully dissolved.
  3. Stir in the oats until well incorporated.
  4. Drop spoonfuls of the mixture onto a waxed paper-lined cookie sheet.
  5. Refrigerate the cookies for 10 minutes to cool and set.
  6. Serve and enjoy!

Notes

For extra crunch, add chopped macadamia nuts or your favorite nuts.

Substitute cocoa powder or melted chocolate for carob powder if desired.
