These No Bake Peanut Butter Oat Cups are the perfect snack or dessert for anyone craving something easy, delicious, and healthy! With minimal ingredients and no oven required, these cups come together quickly and are packed with rich peanut butter flavor, oats, and just a hint of sweetness.

Ingredients

1 cup creamy peanut butter

1/3 cup honey

1/4 cup coconut oil, melted

1 tsp vanilla extract

2 cups rolled oats

1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large bowl, mix together the peanut butter, honey, melted coconut oil, and vanilla extract until smooth.
  2. Add the rolled oats to the mixture and stir until fully combined. If you’re using mini chocolate chips, fold them in at this stage.
  3. Scoop the mixture into a lined muffin tin, pressing down firmly to create an even base. This will form the crust for each oat cup.
  4. Place the muffin tin in the refrigerator and chill for at least 30 minutes to allow the cups to set.
  5. Once chilled, remove from the muffin tin and enjoy! These peanut butter oat cups are best served cold, but they can also be stored at room temperature for a few hours.

Notes

**Add-ins**: Customize these cups by adding dried cranberries, raisins, or even a handful of nuts for added crunch.

**Sweeteners**: Swap honey with maple syrup or agave if you prefer a different sweetener.

**Chocolate Lovers**: Add dark chocolate chips or drizzle some melted chocolate on top for a richer flavor.
