1 lb BBQ sausage, sliced
1 cup long-grain white rice
2 cups chicken broth
1 small onion, diced
1 bell pepper, diced
1 cup frozen corn
1/2 cup BBQ sauce
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Cook the Sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook for 5-7 minutes, until browned and crispy. Remove and set aside.
Sauté Vegetables: In the same skillet, add diced onion and bell pepper. Cook for 3-5 minutes until softened. Add frozen corn and cook for another 2-3 minutes.
Add Rice and Seasonings: Stir in rice, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Add chicken broth and bring to a boil.
Simmer: Reduce heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
Combine and Serve: Return the sausage to the skillet and stir to combine. Cook for 2-3 minutes, then garnish with fresh parsley and serve hot.
Extra Veggies: Add zucchini, carrots, or mushrooms for more veggies in the dish.
Spicy Kick: Add red pepper flakes or hot sauce for extra heat.
