Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup orzo pasta
2 cups beef broth
1 cup water
1 cup shredded cheddar cheese
1 cup diced tomatoes (canned or fresh)
1 teaspoon Worcestershire sauce
1 teaspoon smoked paprika
Salt and pepper, to taste
2 tablespoons olive oil
Optional: sliced pickles and ketchup for serving
Instructions
Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, sauté until softened, about 3 minutes.
Add ground beef, breaking it up. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
Stir in orzo pasta, diced tomatoes, Worcestershire sauce, smoked paprika, salt, and pepper.
Pour in beef broth and water. Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid mostly absorbed. Stir occasionally.
Remove from heat, sprinkle shredded cheddar cheese on top, cover, and let sit 2-3 minutes until cheese melts.
Serve warm with optional sliced pickles and ketchup.
