Pancake Sausage Balls are the ultimate breakfast and brunch recipe, combining savory sausage, fluffy pancake batter, and melty cheese into easy, bite-sized treats perfect for busy mornings, parties, or on-the-go snacks.

Ingredients

1 pound breakfast sausage, uncooked

1 ½ cups pancake mix

1 cup shredded cheese (cheddar or your choice)

½ cup milk

1 large egg

½ teaspoon black pepper (optional)

1 teaspoon garlic powder (optional)

Maple syrup, for serving (optional)

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • In a large bowl, break apart the uncooked sausage.

  • Add pancake mix, shredded cheese, milk, egg, black pepper, and garlic powder. Mix thoroughly until combined.

  • Scoop small handfuls and roll into golf ball-sized balls. Place on the prepared baking sheet.

  • Bake for 15–20 minutes, or until golden brown and cooked through (internal temperature of 165°F/74°C).

  • Let cool slightly and serve warm, optionally with maple syrup.

Notes

For a spicy kick, add diced jalapeños or a sprinkle of cayenne pepper.

Different cheeses like mozzarella, pepper jack, or gouda can change up the flavor.

Mix a tablespoon of maple syrup into the batter for a sweet-savory twist.

Make mini versions for party appetizers; adjust baking time as needed.

Freeze baked or unbaked balls for quick breakfasts later.
