A silky, creamy vanilla panna cotta topped with a bright, fruity berry coulis. This elegant make-ahead dessert is effortless to prepare and wonderfully refreshing.

Ingredients

1 Tbsp gelatin powder

3 Tbsp cold water

1 cup milk

2 tsp vanilla extract (or 1 vanilla pod)

1/3 cup white sugar

2 cups cream

Fresh berries for serving (optional)

Berry Coulis:

1 1/2 cups strawberries or mixed frozen berries

3 Tbsp sugar

Instructions

  1. Chill 6 serving glasses in the refrigerator.
  2. In a small bowl, combine gelatin powder and cold water. Let it bloom.
  3. In a saucepan, heat the milk, vanilla, and sugar over medium heat until the sugar dissolves. Do not simmer.
  4. Stir the bloomed gelatin into the warm milk mixture until fully dissolved.
  5. Slowly pour in the cold cream while stirring. Let the mixture cool for about 5 minutes.
  6. Pour into chilled glasses and refrigerate for at least 5 hours or until set.
  7. For the berry coulis, simmer berries and sugar for about 5 minutes. Cool and refrigerate.
  8. Top the panna cotta with berry coulis and fresh berries before serving.

Notes

Infuse the milk with citrus zest, cinnamon, or cardamom for added flavor.

Swap berry coulis for mango, raspberry, or passionfruit sauces.

Lighten the dessert by replacing part of the cream with additional milk.

Keep coulis separate until serving for best color and texture.
