Ingredients

½ cup butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

8 oz cream cheese, softened to room temperature

½ cup powdered sugar

1 teaspoon vanilla extract

1 ½ cups fresh blueberries

2 cups fresh strawberries, hulled and sliced

½ cup white chocolate chips or mini marshmallows (optional for extra white stripes)

Instructions

  1. Make the Cookie Base: Preheat the oven to 350°F. Cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract, then gradually mix in the flour, baking powder, and salt until just combined.
  2. Shape the Pizza: Press the dough onto a greased 12-inch pizza stone or large baking sheet, forming a circle about 12-14 inches in diameter. Keep the edges slightly thicker.
  3. Bake the Cookie Base: Bake for 12–15 minutes, or until the edges are lightly golden. Let it cool completely on the pan for about 30 minutes.
  4. Make the Frosting: Beat room temperature cream cheese with powdered sugar and vanilla extract until smooth and spreadable.
  5. Create Your Canvas: Once the cookie base has cooled, spread the cream cheese frosting evenly over the top, leaving about a ½-inch border around the edges.
  6. Design Your Flag: In the upper left corner, arrange blueberries for the star field. Create stripes across the rest of the pizza with sliced strawberries, alternating with white frosting or mini marshmallows.
  7. Let It Set: Refrigerate the assembled fruit pizza for at least 1 hour before serving to allow everything to firm up.

Notes

Pat the fruit dry with a paper towel before placing it on the pizza to avoid excess moisture.

For a fun twist, try different fruits, like kiwi, pineapple, or blackberries.

Make the cookie base ahead of time and store it in an airtight container for up to a day.
