Peach Cake with Brown Sugar Frosting is a moist, tender cake that combines juicy peaches with a rich, buttery brown sugar frosting. Perfect for any occasion, this cake is simple to make and will impress your guests.

Ingredients

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup granulated sugar

½ cup unsalted butter (softened)

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup fresh or canned peaches (diced)

½ cup unsalted butter (for frosting)

1 cup packed brown sugar

¼ cup milk

2 cups powdered sugar

½ teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract and sour cream.
  3. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the diced peaches.
  4. Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick comes out clean. Let the cake cool completely in the pan.
  5. Make the Brown Sugar Frosting: In a saucepan, melt butter over medium heat. Stir in brown sugar and cook for 2-3 minutes. Add milk, bring to a boil, then remove from heat. Let it cool slightly, then whisk in powdered sugar and vanilla extract until smooth.
  6. Frost the Cake: Spread the frosting evenly over the cooled cake using a spatula. Let it set before serving.

Notes

Use canned peaches if fresh ones aren’t available. Just be sure to drain them thoroughly to avoid excess moisture.

For a variation, try substituting the brown sugar frosting with cream cheese frosting or whipped cream.

Add chopped nuts like pecans or walnuts into the cake for extra flavor and crunch.
