Peach Cobbler Egg Rolls combine the warm, sweet flavors of peach cobbler with a crispy fried egg roll wrapper, creating a fun and delicious dessert or snack perfect for sharing.

Ingredients

  • 2 cups fresh or canned peaches, diced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Vegetable oil, for frying
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. In a saucepan over medium heat, combine peaches, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Stir well.
  2. Bring to a simmer and cook for 5-6 minutes, stirring occasionally, until peaches soften slightly.
  3. Mix cornstarch with 1 tablespoon water, stir into peach mixture, and cook 1-2 minutes until thickened. Remove from heat and cool slightly.
  4. Lay an egg roll wrapper flat. Spoon about 2 tablespoons of peach filling onto center.
  5. Fold sides inward, roll tightly corner to corner, sealing edge with beaten egg. Repeat with remaining wrappers and filling.
  6. Heat 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
  7. Fry 2-3 egg rolls at a time for 2-3 minutes until golden and crispy.
  8. Drain on paper towels.
  9. While warm, roll egg rolls in cinnamon-sugar mixture to coat evenly.
  10. Serve immediately.

  • Use frozen peaches thawed and drained if fresh are unavailable.
  • Add chopped nuts or raisins to the filling for texture.
