Peanut Butter Mousse with Crunchy Peanuts is a creamy and velvety dessert with a delightful crunch from chopped peanuts, perfect for peanut butter lovers.

Ingredients

1 cup heavy whipping cream (cold)

½ cup creamy peanut butter (unsweetened or sweetened, based on preference)

¼ cup powdered sugar (adjust to taste)

1 teaspoon vanilla extract

1/3 cup salted or unsalted roasted peanuts, chopped

Optional toppings: melted chocolate, flaky sea salt

Instructions

  1. Whip the Cream: In a cold mixing bowl, pour the heavy whipping cream and whip using an electric mixer or hand whisk until stiff peaks form. Be careful not to overwhip.
  2. Prepare the Peanut Butter Mixture: In a separate bowl, mix the peanut butter, powdered sugar, and vanilla extract until smooth. If needed, warm the peanut butter slightly to ease mixing.
  3. Fold in the Whipped Cream: Gently fold the whipped cream into the peanut butter mixture in three batches to maintain the airy texture.
  4. Assemble the Mousse: Pour the mousse into serving glasses. For added crunch, layer chopped peanuts at the bottom of the glass before adding the mousse.
  5. Chill: Cover the glasses with plastic wrap and refrigerate for at least 2 hours or until the mousse is set.
  6. Garnish and Serve: Just before serving, top the mousse with chopped peanuts, a drizzle of melted chocolate, or a pinch of flaky sea salt. Serve chilled and enjoy!

Notes

For a richer taste, drizzle melted chocolate over the mousse.

Use coconut cream instead of heavy cream for a dairy-free version.

Add cinnamon or coffee for a flavorful twist.

Store the mousse in an airtight container in the fridge for up to 3 days.
