It’s elegant yet simple to prepare, with the flavors of vanilla and lemon zest complementing the tender fruit. Perfect for breakfast, brunch, or dessert, this dish offers a delicate balance of sweetness and creaminess.

Ingredients

2 eggs

3 tablespoons sugar

2/3 cup whole milk

1/3 cup all-purpose flour

1 teaspoon vanilla extract

1/2 teaspoon lemon zest

1 pinch salt

2 small-medium ripe pears, peeled, cored, and sliced

1/2 tablespoon butter, to grease skillet

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch skillet or baking dish with butter.
  2. In a bowl, whisk together the eggs and sugar until the mixture is pale and frothy.
  3. Add the milk, flour, vanilla extract, lemon zest, and salt, whisking until smooth and well combined.
  4. Arrange the pear slices evenly in the prepared skillet or dish.
  5. Pour the batter over the pears, making sure they’re mostly covered.
  6. Bake for 35–40 minutes, or until the clafoutis is set and lightly golden on top.
  7. Let cool slightly before serving. Optionally, dust with powdered sugar before serving.
