Pepper Steak with Bell Peppers and Onion is a quick and flavorful stir-fry dish that combines tender strips of beef, crisp bell peppers, and sweet onions, all cooked in a savory soy sauce-based marinade. This easy recipe is perfect for busy weeknights, offering a delicious and satisfying meal in just 30 minutes!

Ingredients

For the Marinade and Sauce:

  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon cornstarch
  • ¼ cup water

For the Stir-Fry:

  • 1 pound sirloin or flank steak, thinly sliced against the grain
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil or sesame oil, divided

Instructions

  1. Marinate the Steak:

    • In a bowl, whisk together soy sauce, garlic, ginger, brown sugar, cornstarch, and water. Add the sliced steak and toss to coat well. Let it marinate for at least 15 minutes, or up to 2 hours for a deeper flavor.
  2. Sear the Steak:

    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the marinated steak in batches, cooking for 1-2 minutes per side until browned but not overcooked. Remove the steak from the pan and set it aside.
  3. Cook the Vegetables:

    • In the same skillet, add the remaining oil. Toss in the bell peppers and onions, stir-frying for 3-5 minutes until they’re tender-crisp.
  4. Combine and Serve:

    • Return the cooked steak to the skillet and toss it with the vegetables. Pour the reserved marinade over the mixture, stirring until the sauce thickens and coats everything evenly. Serve immediately over steamed rice or noodles.

Notes

  • Spicy Kick: Add red pepper flakes or sriracha to introduce some heat.
  • Veggie Add-Ins: Feel free to include other vegetables like mushrooms, snap peas, or zucchini.
  • Gluten-Free Option: Use tamari or coconut aminos as a soy sauce substitute for a gluten-free version.
  • Different Protein: You can swap the beef for chicken, shrimp, or tofu for a different flavor profile.
