Pina Colada Lush is a tropical no-bake dessert with layers of golden Oreos, cream cheese, pineapple, coconut pudding, and whipped topping. It’s a refreshing and indulgent treat that brings the island flavors of a pina colada to life.

Ingredients

20 golden Oreo cookies

3 tablespoons unsalted butter, melted

8 oz cream cheese, room temperature (Philadelphia recommended)

¼ cup powdered sugar

8 oz crushed pineapple, drained (or 1/3 cup drained crushed pineapple)

8 oz whipped topping

3.4 oz instant coconut pudding mix

1 cup milk (skim works well)

½ cup toasted coconut

Cherries for garnish

Instructions

  1. Crush 20 golden Oreos and mix with melted butter. Press into the bottom of an 8×8 glass baking dish to form a crust.
  2. In a large bowl, combine room temperature cream cheese, 4 oz of whipped topping, powdered sugar, and crushed pineapple. Spread evenly over the Oreo crust.
  3. In the same bowl, whisk together milk and coconut instant pudding mix. Let it sit to thicken, then spread evenly over the cream cheese layer.
  4. Spread the remaining 4 oz of whipped topping over the pudding layer.
  5. Sprinkle toasted coconut over the top and refrigerate for a few hours before serving. Garnish with cherries for an extra tropical touch!

Notes

For extra fruitiness, add diced mango, banana slices, or strawberries to the cream cheese layer.

If you prefer larger coconut pieces, use unsweetened coconut flakes instead of toasted coconut.

For a dairy-free version, use dairy-free cream cheese and whipped topping.

For an adult twist, add a tablespoon of rum extract to the pudding mixture or drizzle rum on the crust.
