Sweet and chewy pineapple coconut no-bake balls bursting with tropical flavor, made with crushed pineapple, shredded coconut, and sweetened condensed milk for an easy, refreshing treat.

Ingredients

1 cup crushed pineapple, well drained

1 1/2 cups sweetened shredded coconut (plus extra for rolling)

1/4 cup sweetened condensed milk

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Instructions

  1. In a mixing bowl, combine the drained crushed pineapple, shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and salt.
  2. Mix thoroughly until the ingredients are fully incorporated and the mixture holds together.
  3. Scoop and shape the mixture into 12 bite-sized balls using your hands or a small cookie scoop.
  4. Roll each ball in additional shredded coconut to coat.
  5. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes until firm.
  6. Serve chilled and store leftovers in the refrigerator.
