These pistachio dream cookie bars are chewy, nutty, and layered with a buttery cookie base, a rich pistachio filling, and a sprinkle of pistachios and white chocolate on top.

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup shelled pistachios, chopped

1/2 cup white chocolate chips

1/2 cup unsalted butter, melted

1 cup powdered sugar

1/2 cup shelled pistachios, finely ground

1/4 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

1 large egg, beaten

1/4 teaspoon salt

1/4 cup chopped pistachios (for topping)

1/4 cup white chocolate chips (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Make the base: In a bowl, whisk flour, baking powder, and salt. In another bowl, cream softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla, then gradually mix in dry ingredients. Stir in chopped pistachios and white chocolate chips. Press evenly into prepared pan.
  3. Make the pistachio layer: In a bowl, combine melted butter, powdered sugar, ground pistachios, vanilla, almond extract (if using), beaten egg, and salt. Spread evenly over cookie base.
  4. Bake for 30–35 minutes, until edges are golden and center is set. A toothpick should come out clean or with a few crumbs.
  5. Cool in the pan for 15 minutes. While warm, sprinkle extra pistachios and white chocolate chips on top if desired.
  6. Let cool completely before cutting into squares and serving.
