Potato flautas are crispy, golden tortillas filled with seasoned mashed potatoes and melted cheese. A perfect comfort food for any occasion, whether as a snack, appetizer, or main dish.

Ingredients

4 medium potatoes, peeled and diced

½ cup grated cheese (cheddar or Mexican blend)

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon ground cumin

Salt and pepper to taste

Corn tortillas (10-12)

Vegetable oil for frying

Optional toppings: sour cream, guacamole, salsa, or shredded lettuce

Instructions

  1. Boil the Potatoes: Place the diced potatoes in a pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender.
  2. Mash the Potatoes: Drain the potatoes and return them to the pot. Mash them thoroughly until smooth.
  3. Season the Mixture: Add the grated cheese, garlic powder, onion powder, cumin, salt, and pepper to the mashed potatoes. Stir until everything is well combined.
  4. Heat the Tortillas: In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, just until they become pliable.
  5. Fill the Tortillas: Place about 2 tablespoons of the potato mixture at one end of each tortilla. Roll the tortilla tightly around the filling, tucking in the edges to seal.
  6. Heat the Oil: In a deep pan, heat around ½ inch of vegetable oil over medium-high heat until it reaches 350°F (180°C).
  7. Fry the Flautas: Fry the flautas in batches, about 3-4 minutes per side, or until golden brown and crispy. Be careful not to overcrowd the pan.
  8. Drain Excess Oil: Once crispy, remove the flautas from the oil and set them on a plate lined with paper towels to drain the excess oil.
  9. Cool Slightly: Allow the flautas to cool for a few minutes before serving.

Notes

For a spicier version, add diced jalapeños or chili powder to the mashed potatoes.

Sweet potatoes can be substituted for regular potatoes for a unique twist on the flavor.

If you prefer, you can bake the flautas in the oven at 400°F (200°C) for about 15-20 minutes until crispy.

For a vegan version, use plant-based cheese alternatives or omit the cheese altogether.

These can be stored in the refrigerator for up to 3 days and reheated in a skillet or oven to maintain crispiness.
