4 cups bread flour (or all-purpose flour)
1 tbsp active dry yeast
1 cup warm water (90–100°F)
1/4 cup sugar (coconut, maple, or cane)
1/4 cup melted butter
2 eggs (divided)
1 tsp salt
Sesame or poppy seeds (optional)
Activate Yeast: Combine warm water and yeast in a mixing bowl. Let bloom for 3 minutes.
Mix Dough: Add flour, sugar, melted butter, 1 egg, and salt. Mix until dough is no longer sticky. Adjust with flour or water as needed.
First Rise: Cover and let dough rise in a greased bowl for 1 hour until doubled in size.
Shape Buns: Punch down and divide into 10–12 equal portions. Shape into logs for hot dog buns or round balls for hamburger buns.
Second Rise: Place on a parchment-lined baking sheet, spaced apart. Let rise for another 30 minutes.
Bake: Preheat oven to 375°F. Brush buns with egg wash (1 egg + 1 tbsp water), sprinkle seeds if using, and bake for 13–15 minutes until golden.
Cool & Serve: Let cool slightly before serving or storing.
For richer flavor, sub whole milk for water.
Add garlic powder or herbs for savory buns.
To make vegan: use plant-based butter and egg replacer.
