Ingredients

1 ½ cups dried apricots, chopped

½ cup cashews

1 cup rolled oats

1 tablespoon chia seeds

1 tablespoon maple syrup

1 tablespoon coconut oil, melted

1 tablespoon water

Pinch of salt

Instructions

  2. Mix in the dry ingredients: Add oats, chia seeds, and salt, and pulse again to combine.
  3. Mix the wet ingredients: In a small bowl, combine maple syrup, melted coconut oil, and water. Stir until well mixed.
  4. Combine wet and dry ingredients: Pour the wet mixture into the food processor with the dry ingredients and pulse until everything sticks together.
  5. Form the bars: Transfer the mixture to a lined 8×8-inch baking dish, pressing it firmly into the dish.
  6. Chill and set: Refrigerate the bars for 1-2 hours or until firm enough to slice.
  7. Serve: Once set, slice the mixture into bars. Store in an airtight container in the fridge for up to a week.

Notes

For a nut-free version, substitute sunflower seeds or pumpkin seeds for the cashews and almonds.

To increase sweetness, add more maple syrup or use agave syrup.

Experiment with different dried fruits like figs or raisins for variety.

Add a scoop of plant-based protein powder to boost protein content.
