A rich and indulgent Red Robin–style mud pie made with a crunchy chocolate cookie crust, layered ice creams, and finished with fudge sauce and whipped cream.

Ingredients

2 cups crushed Oreo cookies or chocolate graham crackers

1/2 cup melted butter

1 quart chocolate ice cream

1 quart vanilla ice cream

1 quart coffee ice cream

1 cup whipped cream

1 cup fudge sauce (store-bought or homemade)

Crushed peanuts or chocolate chips (optional)

Instructions

  1. Crush the Oreo cookies or chocolate graham crackers into fine crumbs.
  2. Mix the crumbs with melted butter until evenly combined and resembles wet sand.
  3. Press the mixture firmly into the bottom and sides of a 9-inch pie dish.
  4. Freeze the crust for 10 minutes to set.
  5. Allow the ice cream to soften slightly at room temperature.
  6. Spread the chocolate ice cream evenly over the crust and freeze for 30 minutes.
  7. Add the vanilla ice cream layer, smooth evenly, and freeze for another 30 minutes.
  8. Spread the coffee ice cream as the final layer and freeze until solid, about 1–2 hours.
  9. Warm the fudge sauce slightly and spread it over the top layer.
  10. Top with whipped cream and sprinkle with crushed peanuts or chocolate chips before serving.
