Rice Krispie Birds Nests

Festive no-bake Rice Krispie Bird Nests made with gooey marshmallow cereal treats, topped with green coconut “grass” and colorful candy eggs for a fun and easy spring dessert.

Ingredients

1 cup sweetened shredded coconut (3.5 oz / 100 g)

½ teaspoon green food colouring

3 tablespoons unsalted butter

1 bag (10 oz / 285 g) mini marshmallows

1 teaspoon vanilla extract

6 cups Rice Krispies cereal (168 g / 6.4 oz)

½1 cup mini eggs, jelly beans, or chocolate eggs for garnish

Instructions

  1. Lightly spray a 12-cup muffin tin with non-stick cooking spray and set aside.
  2. In a small bowl, mix the shredded coconut with green food colouring until evenly coated. Set aside to dry.
  3. In a large microwave-safe bowl, combine marshmallows, butter, and vanilla extract. Microwave on high for 1 minute, then stir. Continue microwaving in 15-second intervals if needed until fully melted and smooth.
  4. Add the Rice Krispies cereal to the melted marshmallow mixture and stir until evenly coated.
  5. Spoon about ½–¾ cup of the mixture into each muffin cavity.
  6. Lightly grease your hands and press the mixture into the bottom and up the sides of each cup to form a nest shape with a well in the center.
  7. Let the nests stand at room temperature for about 20 minutes to set.
  8. Carefully remove the nests from the pan. Top with green coconut and place 3–4 candy eggs in the center of each nest before serving.

Notes

Lightly grease hands with cooking spray to prevent sticking while shaping.

Do not overheat the marshmallow mixture to avoid hard nests.

Liquid food colouring coats coconut more evenly than gel; dilute gel with a little water if needed.

Best enjoyed within 24 hours for optimal texture.

Store in an airtight container at room temperature for up to 3 days.

Freezing is not recommended as it affects texture.
