Ritz Cracker Meatloaf

Ritz Cracker Meatloaf is a flavorful, cheesy twist on the classic meatloaf. With a savory beef mixture, melted cheddar, and a crunchy Ritz cracker topping, this easy-to-make dish is sure to become a family favorite.

Ingredients

1 cup ketchup

2 teaspoons Worcestershire sauce

½ tablespoon yellow mustard

2 teaspoons onion powder

1 tablespoon brown sugar

2 lbs lean ground beef

2 eggs

½ cup finely diced yellow onion

½ cup finely diced green bell pepper

¼ cup milk

1 oz onion soup mix

1 sleeve Ritz crackers (about 32 crackers)

2 cups shredded cheddar cheese

½ cup shredded cheddar cheese (for topping)

5 Ritz crackers, crumbled (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×5-inch loaf pan with cooking spray and set aside.
  2. In a small mixing bowl, combine the ketchup, Worcestershire sauce, yellow mustard, onion powder, and brown sugar. Stir well and set aside.
  3. In a large mixing bowl, combine the ground beef, eggs, diced onions, diced green bell peppers, milk, and onion soup mix.
  4. Place the Ritz crackers in a large Ziploc bag and crush them using a rolling pin until finely ground. Add the crushed crackers to the meat mixture.
  5. Pour ⅓ cup of the prepared ketchup mixture into the meat mixture. Add the shredded cheddar cheese, then mix everything together until fully combined.
  6. Line a loaf pan with aluminum foil and spray it with cooking spray. Press the meat mixture into the pan and smooth the top evenly.
  7. Spread the remaining ketchup mixture over the top of the meatloaf.
  8. Bake for 50 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheddar cheese and crumbled Ritz crackers.
  9. Return to the oven and bake for another 5-10 minutes, or until the cheese has melted and the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For a lighter version, substitute ground turkey or chicken for the beef.

Add red pepper flakes or chopped jalapeños to the meat mixture for some heat.

If you don’t have Ritz crackers, you can use breadcrumbs as a substitute.
