Nothing beats these 4-ingredient Ritz S’mores Cookies for a quick and tasty no-bake treat! Made with crunchy Ritz crackers, gooey marshmallow creme, smooth chocolate almond bark, and optional graham cracker crumbs and sprinkles, these cookies are perfect for summer fun or holiday cookie trays.

Ingredients

48 Ritz crackers

7 ounces marshmallow creme or marshmallow fluff

24 ounces chocolate almond bark or Ghirardelli melting wafers

Optional Toppings:

½ cup graham cracker crumbs

½ cup marshmallow bits

½ cup mini chocolate chips

½ cup sprinkles or jimmies

Instructions

  1. Melt the chocolate almond bark in a microwave-safe bowl following package directions, heating at 50% power for 30 seconds, stirring, and repeating until fully melted.
  2. Line two large baking sheets with parchment or wax paper. Place half of the Ritz crackers evenly on the sheets.
  3. Using a greased spoon, place 1 to 2 teaspoons of marshmallow creme in the center of each cracker.
  4. Top each with another Ritz cracker and gently press to create a sandwich with an even marshmallow layer.
  5. Using small tongs or a fork, carefully dip each cracker sandwich into the melted chocolate, tapping off excess chocolate on the side of the bowl. Place dipped cookies on the lined baking sheets.
  6. If desired, sprinkle your choice of graham cracker crumbs, marshmallow bits, mini chocolate chips, or festive sprinkles on top of the wet chocolate.
  7. Allow the cookies to set at room temperature until the chocolate hardens completely.

Use dark, milk, or white chocolate almond bark for different flavor profiles.
