Rocky Road No-Bake Clusters combine smooth melted chocolate, fluffy mini marshmallows, crunchy almonds, and optional rice crispies for a sweet and savory treat that’s quick and easy to prepare. No baking required!

Ingredients

250g milk chocolate (high-quality chocolate recommended for best flavor)

50g dark chocolate (for added richness)

150g mini marshmallows

100g almonds (whole, for crunch)

100g rice crispies (optional, for added lightness and crunch)

Instructions

  1. Line a baking sheet with parchment paper to prevent the clusters from sticking.
  2. Break the milk and dark chocolate into pieces and melt using either a microwave or double boiler until smooth.
  3. Remove the melted chocolate from heat and stir in the almonds, ensuring they are fully coated. Then, fold in the mini marshmallows and rice crispies (if using) until everything is evenly combined.
  4. Use a spoon to scoop and drop the mixture onto the prepared baking sheet, shaping the clusters as you prefer. Add extra marshmallows or almond pieces to the tops before the chocolate sets.
  5. Refrigerate the baking sheet for about 1 hour or until the clusters are firm and set.
  6. Once set, remove the clusters from the parchment paper and serve immediately or store in an airtight container in the fridge.

Notes

For a fruity twist, add dried cherries or cranberries to the mixture.

If you prefer a more decadent texture, skip the rice crispies.

For a festive touch, top with colorful sprinkles or drizzle with white chocolate.
