Romanian Green Pea Soup is a cozy, healthy dish with vibrant green color, fresh flavors, and creamy texture. The combination of herbs, garlic, and lemon adds depth and brightness to this savory soup.

Ingredients

2 cups fresh or frozen green peas

1 medium onion, finely chopped

1 medium carrot, diced

2 cloves garlic, minced

4 cups vegetable broth or chicken broth

1 tablespoon olive oil

12 sprigs of fresh thyme (or 1 teaspoon dried thyme)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt, to taste

Black pepper, to taste

Juice of half a lemon

Optional: cream or yogurt for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the finely chopped onion to the pot and sauté until translucent (about 3-4 minutes). Add the diced carrot and cook for another 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the green peas to the pot and stir well to mix with the vegetables.
  5. Pour in the vegetable or chicken broth, then add the thyme and dill. Season with salt and black pepper to taste.
  6. Increase the heat to bring the soup to a boil. Once boiling, reduce heat and let it simmer for about 20 minutes.
  7. Remove the pot from the heat. Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches in a countertop blender.
  8. Stir in the lemon juice to enhance the flavors.
  9. If the soup is too thick, add some extra broth or water until you reach the desired consistency.
  10. Taste the soup and adjust the salt and pepper as needed before serving.

Notes

For added protein, you can add cooked lentils or beans to the soup.

Add cayenne pepper or hot sauce for a spicy kick.

Skip the cream or yogurt garnish for a dairy-free version.

If you prefer a chunkier soup, blend only half of the soup and leave some peas and vegetables whole.

Store leftovers in an airtight container in the refrigerator for up to 3 days. This soup can also be frozen for up to 3 months.
