Salted Caramel Ritz Cookies are a perfect blend of sweet and salty, with buttery Ritz crackers, rich dulce de leche, and a dark chocolate coating, topped with a sprinkle of flaky sea salt.

Ingredients

60 round buttery crackers (such as Ritz®)

1 cup canned dulce de leche

1 ½ cups dark chocolate chips

1 ½ cups dark chocolate melting wafers

Flaky sea salt (optional, for garnish)

Instructions

  1. Prepare crackers: Arrange half of the crackers, bottom sides up, on a parchment-lined baking sheet.
  2. Add dulce de leche: Spoon a rounded teaspoon of dulce de leche onto the center of each cracker.
  3. Form sandwiches: Top with the remaining crackers, top side up. Place the baking sheet in the refrigerator and chill for at least 30 minutes.
  4. Melting the chocolate: In the top of a double boiler, melt the chocolate chips and melting wafers over medium heat, stirring occasionally, until smooth.
  5. Dip the sandwiches: Using a fork, dip each cracker sandwich into the melted chocolate, allowing the excess to drip back into the bowl.
  6. Chill: Return the chocolate-dipped sandwiches to the prepared baking sheet. If desired, sprinkle lightly with flaky sea salt.
  7. Set the chocolate: Chill the sandwiches for 15 minutes or until the chocolate is set.
  8. Serve: Store the cookies in the refrigerator until ready to serve.

Notes

Swap dark chocolate for milk chocolate for a sweeter taste.

Add chopped nuts like pecans or walnuts to the filling for extra crunch.

Use caramel sauce, Nutella, or peanut butter instead of dulce de leche for a different flavor.

For a spicy twist, sprinkle a touch of chili powder or cayenne pepper on top of the chocolate.
