Ingredients

200g beef (sirloin or flank, thinly sliced)

200g rice noodles

1 tablespoon cooking oil

2 cloves garlic, minced

1 small onion, thinly sliced

1 bell pepper (red or green), chopped

2 cups beef broth

2 tablespoons soy sauce

1 tablespoon peanut butter

1 tablespoon chili paste or sauce (adjust to taste)

1 teaspoon brown sugar

Fresh cilantro leaves (for garnish)

Chopped peanuts (for garnish)

12 red chilies, sliced (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Instructions

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. Heat cooking oil in a large pot or wok over medium-high heat.
  3. Add minced garlic and sliced onion. Sauté until fragrant and translucent, about 2-3 minutes.
  4. Add sliced beef, season with salt and pepper, and stir-fry until browned and cooked through, about 3-5 minutes.
  5. Stir in chopped bell pepper and cook for 2 minutes until slightly softened.
  6. Pour in beef broth. Add soy sauce, peanut butter, chili paste, and brown sugar. Stir well to combine.
  7. Bring soup to a gentle simmer. Adjust seasoning with more soy sauce or chili paste if desired. Simmer for 5-10 minutes to meld flavors.
  8. Divide rice noodles among bowls. Ladle hot beef soup over noodles.
  9. Garnish with fresh cilantro, chopped peanuts, and sliced red chilies.
  10. Serve with lime wedges to squeeze over before eating.

Notes

Use chicken or tofu instead of beef for different protein options.

Add bok choy, mushrooms, or carrots for extra vegetables.

Adjust chili paste to control spice level.

Swap peanut butter for almond butter for a different nutty flavor.

Rinse cooked noodles with cold water and toss with oil to prevent sticking if not serving immediately.

Adding coconut milk creates a creamier broth.

Use cornstarch slurry to thicken the soup if desired.
