Elegant bite-sized puff pastry tarts filled with creamy goat cheese, sweet fig jam, and caramelized onions, finished with fresh thyme. A refined yet simple appetizer perfect for parties or special occasions.

Ingredients

1 sheet puff pastry (store-bought or homemade)

8 oz goat cheese (plain or herbed)

1/2 cup fig jam

1 medium onion (or shallots for a milder flavor)

2 tbsp fresh thyme (or rosemary as an alternative)

1 large egg (or milk for a dairy-free option)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface to about 1/8-inch thick.
  2. Cut circles with a 2 3/4-inch round cutter and place them on a parchment-lined baking sheet.
  3. Dock the centers of each circle to create an indentation.
  4. Whisk the egg and brush the edges of each pastry circle with the wash.
  5. Chill pastry circles in the refrigerator for 10–15 minutes.
  6. Place a teaspoon of caramelized onion in the center of each circle.
  7. Pre-bake the pastries for 12 minutes until puffed and lightly golden.
  8. Add a spoonful of fig jam and top with goat cheese.
  9. Bake for another 5–8 minutes until cheese is melted.
  10. Garnish with fresh thyme and serve warm or at room temperature.
