Savory Hashbrown Chaffles are crispy, cheesy, and low-carb, perfect for a delicious breakfast or snack. Made with shredded hashbrowns, mozzarella, cheddar, and Parmesan cheeses, they offer a satisfying crunch with a cheesy center.

Ingredients

2 cups frozen shredded hashbrowns (thawed)

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

2 large eggs

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley (for garnish)

Cooking spray or olive oil (for greasing the waffle maker)

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions. Lightly grease the plates with cooking spray or olive oil to prevent sticking.
  2. In a large mixing bowl, combine the thawed shredded hashbrowns, mozzarella cheese, cheddar cheese, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Scoop about 1/2 to 3/4 cup of the hashbrown mixture and place it onto the center of the preheated waffle maker. Spread it out slightly to ensure even cooking.
  4. Close the waffle maker and cook for 5-7 minutes, or until the chaffle turns crispy and golden brown.
  5. Carefully remove the chaffle using a spatula. Repeat the process with the remaining mixture, greasing the waffle plates as necessary.
  6. Stack the chaffles on a plate and garnish with freshly chopped parsley for a pop of color and flavor.
  7. Serve warm as a low-carb breakfast or snack, or pair with your favorite dipping sauces for extra flavor!
